IRISH Potato Soup Success!

This soup is a perfect addition to your St. Patty's Day feast!! Today was our annual playgroup party at my house and I served this yummy soup to all of the Mamas! I picked up the paper cup containers at Smart & Final and ordered the wood spoons from Amazon...oh, how I LOVE Amazon!!

Here's how I made this SUPER SIMPLE soup....

what you need:
2 tbs Butter
2+cups chopped onion {i had yellow onion at home}
1 cup chopped celery {make sure to use some of the leaves too}
4 big cloves of garlic {minced}
4 lbs of peeled chopped potatoes
2 cups shredded cheddar cheese {i used a cheddar blend in a bag}
1 cup green onion
8 pieces of crispy cooked bacon...mmmm...bacon...
8 cups chicken stock
salt & pepper to taste

what to do:
Saute onion, celery and garlic in the butter for 4 mins or so. Add broth and chopped potatoes. Bring to a boil, reduce to a simmer and cover. Simmer for 45-60 mins. Blend soup until its pretty smooth and add 1 cup of the cheese. Stir to melt the cheese. Serve garnished with the cheese, green onions & bacon! ENJOY!!!
